Ripe Mango Puliseri May 25, 2007

All the cuisines in this world have a sweet n’ sour concept. A sweet ingredient and a sour ingredient are combined to provide a delicate taste. One such recipe is “Maampazha(Ripe Mango) Puliseri”. The sweetness of the mango and the sourness of the yogurt complement each other in this recipe. There is one more beauty in this recipe, that is, While mango is said to raise the body heat, yogurt is said to cool it down.

I noted down this recipe from a website. The recipe is:

Ingredients:

Ripe Mango – 4 (small) cut into pieces
Turmeric powder – 1 teaspoon
Sugar – 3 teaspoon
Cumin seeds – 1 teaspoon
Green chilli – 4
Grated coconut – 1 Cup
Yogurt – 1 Cup
Mustard seeds – 1 teaspoon
Curry Leaves – 2 or 3
Fenugreek seeds – 1 teaspoon
Dried Red chilli – 2
oil – 1 teaspoon
Salt – 2 teaspoons

Method:

Take Mango pieces in a pan. Add turmeric powder, sugar, salt, 1/2 cup of water and bring it to a boil. Grind the coconut, green chilli and cumin seeds into a paste. when the water is reduced to 1/3 and the mango pieces are cooked, add the coconut paste. Bring it to a boil. Beat the yogurt till smooth and add to the mango mixture. Cook till it boils by stirring continuously. Remove from flame.

In a small pan heat the oil and add the mustard seeds, fenugreek seeds, red chilli and curry leaves. Pour the seasoning over the yogurt mixture and serve.

Mango pulisseri is something I am in love with. 🙂 This was my entry for jfi mangoes last year. My recipe is almost same but without sugar. Yours look great.
