Sweet Potato Rolls June 2, 2007

It was a rainy afternoon. Two people were sitting and watching the rain. The craving for some snacks developed in both. One of them wanted to eat something hot and the other wanted to eat something sweet. Preparing two items is going to be time consuming and boring, Now whose craving is going to be satisfied and who is going to give up…hmmmm…how about Neither! Sweet Potato Roll comes to the Rescue!
I noted down this recipe from a Tamil magazine while I was in India. I am presenting it in my way.
The Recipe is:
Large Sweet potato – 1 (if you buy the Asian variety, we need 1/2 lb)
Butter – 2 Tablespoons
Ajwain seeds – 1/2 teaspoon
Black Pepper Powder – 2 teaspoon
salt – 1 1/2 teaspoon
All purpose flour – 1/2 cup
Bread Crumbs – 1/2 cup
Oil for deep frying
The Method:
Pound the ajwain seeds to a course powder. Mix the butter, black pepper powder, ajwain powder and the salt. Poke the Sweet potato in few places with a fork. Cook in Microwave in “Potato setting” or Boil them till tender. Allow to cool. Peel, Mash and Mix with the Spiced butter. Shape into small logs and set aside.
Mix the all purpose flour with 1/4 cup of water. Take the bread crumbs in a separate plate and arrange everything near the stove. Heat the oil until small drop of the batter, floats to the surface immediately. Take one log of sweet potato mixture, dip in the batter and coat with bread crumbs. Deep fry in the oil till golden brown.
I served it with home made pasta sauce.
